YUMMY RECIPES

Yep, the title says it all.

I love talking food. And some of my patients and I chat recipes on a regular basis. I realized I've stumbled onto a few gems lately and thought I'd post them in case you want to try them too. So hit the links below to head off and do some exploring. Of course, all are low carb, high fat — and YUM!

Roasted Cabbage with Onions and Cheese.

I made this recipe from Eating Well magazine the other night, and I wished I had made a double batch. I actually ate more for a bedtime snack it was so good. I know, cabbage and bedtime snack? You might be doubting me right now, but give it a try! I made a ring bologna with it instead of steaks. I also used some raw milk parmesan instead of cheddar. Full fat everything, of course.

Chicken with Leek and Creamy Dill.

This one came from that same issue of Eating Well. I used fewer potatoes to keep the starchy carbs down and substituted some other veggies and it was delicious.

Chop Salad with Feta and Dill Dressing.

I also love this recipe I've had for a while from Food Network magazine, but have been making more lately now that the weather is warming up. It's simply a chop salad with the most fabulous feta and dill home-made dressing. I add more olive oil when I make it. I also up the veggies and decrease the chickpeas. My kids will eat plate after plate of this one. You could make this dressing and serve it with lots of salads and it'd be divine!

Beef Satay with Spicy Peanut Sauce.

This peanut sauce is one of my absolute favorite sauces to make, and I leave out the brown sugar. I usually make it and then grill up a flank steak (flank steaks are easier!) marinated as the recipe suggests for the satay sticks and some veggie kabobs. I then use the sauce for everything - just put some on your plate and dip! Combine with an easy salad and you've got a fabulous summer grill out meal and extra sauce you can use for veggies or anything else the next day. I often make a double batch and give some to friends.

Happy Eating!
